PERi-PERi Sweetcorn Fritters

Ingredients

  • 50ml PERi-PERi sauce (choose your flavour)
  • 500g Frozen sweetcorn (defrosted)
  • 2 Eggs
  • 110g Self raising flour
  • Pinch of chopped coriander or other green herb
  • Thick Greek yoghurt, poached egg, cherry tomatoes and a pinch of coriander to serve (optional)

Method

  1. Add the sweetcorn, eggs, flour and coriander into a mixing bowl. Pour in your PERi-PERi sauce and mix it all together.
  2. Heat a large, heavy-bottomed pan on a medium to high heat, add a drizzle of oil to the pan and add large spoonful’s (or ice cream scoop) of the sweetcorn mixture into the pan and cook for 3 mins on each side, or until both sides are golden brown in colour.
  3. Remove from pan and serve with Greek yogurt, tomatoes and a poached egg.
